Stable saddles are better because you can upgrade the stirrups and get the + speed/acceleration perks. Sadly, trapper saddles don't allow you to upgrade horns/blankets/stirrups. From what I remember, the beaver saddle is best, all you need is a beaver. You know that all saddles have stats, just pick the one with the highest numbers. I just bought the upland saddle and it is actually insane. The price tag is also insane though. It's a little over $600 but it is absolutely amazing.
